    All of a sudden a dish of chicken from the Middle East

    Exciting, tasty, exotic, and easy! These words perfectly describe this wonderful chicken dish.

    The recipe comes from Berglind Guðmundur’s workshop on GRGS .is and is a real genius as she is expected to be.

    All of a sudden a dish of chicken from the Middle East

    For 3-4

    • 1 kg chicken thighs
    • 500 g carrots, cut lengthwise into pieces
    • 1/2 red onion, cut into slices
    • 2 tbsp. za’atar *
    • 1 lemon, rind and juice
    • sea ​​salt and black pepper
    • 2 tsp. honey
    • olive oil
    • 60 g feta cheese
    • 40 g pistachios (or pine nuts)
    • 1 Avacado
    • rock salad

    Method:

    Combine chicken thighs, carrots, onions, za’atar, lemon zest, salt and pepper, honey and 4 tablespoons olive oil in a bowl and mix well. This can be done 6-8 hours before the chicken is cooked.

    Heat oil in a pan and brown the chicken and vegetables in portions (note not to overload the pan)

    Place in a hot oven at 160 ° C for 10-15 minutes or until the vegetables start to soften and the chicken is cooked through.

    Take the chicken out of the oven and squeeze half a lemon juice over the chicken.
    Mix feta cheese and pistachios in a bowl with 2 teaspoons of olive oil. Pour over the chicken dish.

    Finally, add slices of Avacado and rock salad.

    Za’atar is a spice from the Middle East that is available in some stores, for example from the Spice House. But it is also easy to do it yourself.

    Za’atar

    1 tbsp. thyme
    1 tbsp. cumin (not cumin)
    1 tbsp. coriander
    1 tbsp. roasted sesame seeds
    1 tbsp. sumac (I sometimes skip)
    1/2 tsp. sea ​​salt
    1/4 tsp. chili flakes
