Cold soup of fresh tomatoes and other raw vegetables is ideal for warm summer days. Apart from being a refreshment, this dish also serves as a kind of aperitif because it stimulates the work of the salivary glands and prepares you for a delicious second meal.
Ingredients: 4 Kumato tomatoes, 5 Campari tomatoes, 4 Harmony tomatoes, 1 fresh cucumber, 2 garlic cloves, 1 red pepper, 6-7 basil leaves, olive oil, 2 tablespoons basamic vinegar, salt, pepper.
- Cut all the vegetables into pieces, and remove the seeds from the cucumbers first.
- Put in a blender, add basil, salt, and pepper as desired, and mix into a smooth soup.
- Add two tablespoons of olive oil and two balsamic spoonfuls of vinegar and blend briefly.
- Serve with a few drops of olive oil.
