- Recipe for four 300 g kidney beans
- 50 g walnuts
- ½ dl fresh coriander
- 1 dl carrots
- ½ onion
- 2 pcs. garlic cloves
- 1 pc. beetroot medium or 2 pcs. small
- 1 tbsp. olive oil
- 1 tsp. cumin
- 1 dl boiled rice
- 1 tsp. dijon mustard
- Salt and pepper to taste
Start by boiling the rice, sift it, and put it in a bowl. Put the walnuts in a food processor and chop them down a little and mix with the rice. Next, take the garlic, carrots, and beets and grate them in a grater and mix with the greens and nuts.
Kidney beans are placed in a food processor along with the onion and the rest of the ingredients. Knead the mixture a little and form a round buff, place on baking paper and place in the oven for about 25 minutes at 180 degrees. Serve with fresh salad, avocado, bean sprouts, or your favorite vegetable.
